No kneading, no rising Honey Wheat Bread

No kneading, and no rise time makes this bread fast and easy. Not to mention delicious!! This was a crockpot recipe that I adapted to conventional oven.

Ingredients:
2 cups warm (not hot) milk
2 TB canola oil (it's healthier than vegetable oil)
1/4 Cup honey
3/4 tsp salt
1 pckg active dry yeast (2 1/4 tsp)
3 cups whole wheat flour, divided
3/4 to 1 Cup bread flour (or all-purpose flour)

1. Grease or spray bread pan. In electric mixer, combine milk, oil, honey salt, yeast, 1 1/2 cups wheat flour and 1/2 cup bread flour. Mix at medium low speed for 2 minutes.
2.Gradually add remaining wheat flour and 1/4 to 1/2 cup bread flour. Mix until completely combined. Unlike other bread recipes, this dough is VERY sticky. You may be tempted to add more flour, but you don't need to.
3. Transfer to prepared pan and cook in a 325 degree oven for 1 hour. If your crock pot is big enough, you can also put the bread pan with the dough in it, in the crock pot and cook it on high for 3 hours.

Triple Chocolate Cake in the Crockpot

We made this for dessert when we had the missionaries over for dinner last week. Because I knew it would be easy, I asked Alan to make it. He did, and it turned out really moist and delicious. Ingredients:

18 1/2 oz. pkg chocolate cake mix

3.9 oz pkg instant chocolate pudding mix

1 cup (8 oz ) sour cream (I used fat free, it was fine)

4 eggs

1 cup water

3/4 cup oil

1 cup chocolate chips

1. Combine cake mix, pudding mix, sour cream, eggs, water, and oil in electric mixer bowl. Beat on medium speed for 2 minutes. Stir in chocolate chips.

2. Pour into greased slow cooker. Cover and cook on low 6-7 hours, or high 3-4 hours, or until toothpick inserted near center comes out with moist crumbs.

3. Serve with whipped cream or ice cream.

Cookie Dough Cupcakes

Ingredients:
Your favorite chocolate chip cookie dough
Your favorite cake mix

1.Roll your dough into 2" balls. Freeze the cookie dough balls at least 4 hours.
2.Make your cake batter. Pour into lined cupcake pan filling each cup about 2/3 full.
3. Place frozen balls of cookie dough on top of the batter of each cupcake.
4. Place in oven and bake for 15-20 minutes.
5. Cool, frost/decorate your cupcakes, then enjoy!!

Notes: Do not skip the freezing process otherwise you will just have a baked cookie inside a cupcake. If you want actual cookie dough in the cupcake, you must freeze the dough so that it's still doughy when you are finished cooking it. Also, do not cook longer than 20 minutes. 17 minutes was fine for our cupcakes.

Valentine Eclair

1 package (17-1/4 oz) frozen puff pastry, thawed
3 cups cold milk
1 package (5.1 oz) instant vanilla pudding mix
2 cups heavy whipping cream
1 teaspoon vanilla extract, divided
1 cup confectioners' sugar
1 tablespoon water
1/4 teaspoon almond extract
1/2 cup semisweet chocolate chips
1 teaspoon shortening.

On a lightly floured surface, roll each puff pastry into a 12 in. square. Cut pastry into an 11 in. heart. Place on greased baking sheets. Bake 400 degrees 12-15 minutes or until golden brown. Cool on wire rack.

Combine milk and pudding until thick. In a mixing bowl, beat cream and 1/2 teaspoon vanilla until stiff peaks form. Carefully fold into pudding.

Split puff pastry hearts in half. Place one layer on a serving plate. Top with 1/3 of the pudding mixture. Repeat twice. Top with remaining pastry.

In a bowl, combine confectioners' sugar, water, almond extract and the remaining vanilla until smooth. Spread over top. Melt chocolate chips and shortening; pipe in diagonal lines in one direction. Use a sharp knife and draw right angles across the pipped lines. Refrigerate until set.

The Best Cinnamon Rolls

I love this recipe. The pudding in them is the key to their fluffiness.

1 cup milk (70-80 degrees)
1/4 cup water (70-80 degrees)
1/4 cup butter, softened
1 egg
1 teaspoon salt
4 cups flour
1/4 cup instant vanilla pudding mix
1 tablespoon sugar
1 tablespoon active dry yeast

Filling:
1/4 cup butter, softened
1 cup packed brown sugar
2 teaspoons ground cinnamon

In bread machine pan, place first nine ingredients in order. Select dough setting (check after 5 minutes; add 1-2 tablespoons water or flour if needed).

When cycle is done, turn dough onto lightly floured surface. Roll into 17 in x 10 in rectangle. Spread butter, sprinkle with brown sugar and cinnamon. Roll up jelly-roll style. Cut into slices ( I wrap dental floss around it to cut it better). Place on a greased 13 in x 9 in baking pan. Cover and let rise until doubled-about 45 minutes. Bake 350 degrees for 20-25 minutes. Cool and add some frosting.

Cinnamom Muffins

These were a hit at Christmas brunch!

CINNAMON MUFFINS

4 tsp. baking powder
1/2 tsp. salt
2 Tbsp. cinnamon
2 cups flour
1 cup sugar
1 cup nuts, (I never add them but you can if you want :)
1 cup milk
1/2 cup oil (or melted butter)
2 eggs

Combine dry ingredients. Add wet. Stir, do not beat! Bake 15 minutes at 400 degrees in greased muffin pan. Makes 16. This recipe easily halved; also stores really well in refrigerator so you can bake only as many you need at a time. Also can be baked using cupcake liners, but bottom of muffin will not be as soft.
