I made these on Halloween morning. They're really flavorful and super moist. This is my version of a recipe I got off of allrecipes.com. To me, they taste like pumpkin bread. Note: I used an entire can of pumpkin, but the recipe only calls for 1 cup. You can use a whole can if you like, but it makes them super rich.
Ingredients
2 cups all-purpose flour
3 tablespoons brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon salt
1 1/2 cup milk-you made need more to thin out the batter a little
1 cup of pure pumpkin
1 egg
2 tablespoons vegetable oil
Directions
In a separate bowl, mix together the milk, pumpkin, egg, and oil. Combine the flour, brown sugar, baking powder, baking soda, cinnamon, ginger and salt, stir into the pumpkin mixture just enough to combine.
Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
