We made this for Easter dessert. It was so good!
1 envelope unflavored gelatin
1/2 cup cold water
1 cup heavy whipping cream
3/4 cup sugar
1 cup sour cream
1/2 teaspoon vanilla extract
1 (10 oz) package frozen sweetened raspberries, thawed
fresh raspberries and mint springs (optional)
In a small saucepan, sprinkle gelatin over cold water, let stand 1 min. Bring to boil, cook and stir until dissolved. Remove and set aside.
In another saucepan, hear whipping cream and sugar over med. heat until sugar dissolves and mix is lukewarm. Remove; stir in gelatin mixture until completely dissolved. Cover and refrigerate 30 minutes.
Stir in sour cream and vanilla. In each of four parfait glasses, place 1/4 cupful of cream mixture (it's still liquid, don't worry it will harden) top each with rounded TBS. of raspberries. Repeat layers. Top with cream mix and cover and refrigerate 3 hours. Garnish with raspberries and mint if desired. Makes 4

Home made marshmallows
1 cup confectioners' sugar for dusting
2 cups white sugar
1 tablespoon light corn syrup
1 1/4 cups water, divided
4 tablespoons unflavored gelatin
2 egg whites
1 teaspoon vanilla extract
DIRECTIONS
Dust a 9x9 inch square dish generously with confectioners' sugar.

1. In a saucepan over medium-high heat, stir together white sugar, corn syrup and 3/4 cup water. Heat to 250 to 265 degrees F (121 to 129 degrees C), or until a small amount of syrup dropped into cold water forms a rigid ball.
2. While syrup is heating, place remaining water in a metal bowl and sprinkle gelatin over the surface. Place bowl over simmering water until gelatin has dissolved completely. Keep in a warm place until syrup has come to temperature. Remove syrup from heat and whisk gelatin mixture into hot syrup. Set aside.
3.In a separate bowl, whip egg whites to soft peaks. Continue to beat, pouring syrup mixture into egg whites in a thin stream, until the egg whites are very stiff. Stir in vanilla. Spread evenly in prepared pan and let rest 8 hours or overnight before cutting shapes with cookie cutters. Or, using a pastry bag, pipe out desired shapes while the mixture is still warm.

Easy Burritos
The sauce is great and it's easy to make. Hope you like it!
6 frozen burritos
2 Tbs butter
3 Tbs flour
1 3/4 water
1 can (8oz) tomato sauce
1 1/2 tsp chili powder
1 tsp beef bouillon
3/4 tsp salt
2 cups cheese
1 can olives sliced (opt)
1/3 cup chopped green onions (opt)
Place frozen burritos in a greased 13 x 9 dish; set aside. In a saucepan, melt butter. Stir in flour until smooth; gradually stir in water. Bring to a boil; cook and stir for 2 minutes or until thickened. Add the tomato sauce, chili powder, bouillon and salt. Simmer, uncovered for 5 minutes or until thickened
Pour over burritos. Sprinkle with cheese, olives and onions. Bake uncovered at 350 for 35-40 minutes.

Cornbread Casserole
I kinda just made this from a couple recipies I read:
1 Can of Blackbeans
1 Can of diced tomatoes
1 Can of Corn
1 8 oz can of Tomatoe Sauce
6 green onions
1 Tbsp. Cumin
1 tsp. sugar
1 lb Ground Beef
Cornbread mix
Brown the ground beef and drain off the grease.
Drain the blackbeans and rinse. Drain the tomatoes and corn. Put Corn, Tomatoes, and Blackbeans in a large casserole dish. Add tomatoe sauce. Cut up green onions with kitchen shears, add to dish. Add cumin. Add Ground beef. Mix to combine. Sprinkle sugar on top. Make the cornbread mix (some use Jiffy I just made the recipie on the corn meal box)pour evenly on top of mixture.
Preheat oven to 350
Bake for 30 min at least ( I find that time depends upon type of cornbread mix)I start at 30 and go from there.

Cobbler
This is a recipe I got from my Young Women's leader a long time ago. I made it for some friends the other night and they loved it so much they wanted the recipe. She told her family about it and now they all want the recipe too. So I thought it was worthy of sharing with you too. It's yummy and really easy to make.
1/2 cup butter
1 cup flour
1 cup sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 cup milk
16 oz can pie filling fruit
Put the butter in a 9 x 9 pan and place in the oven as it preheats to 350 degrees, so it will melt. Stir everything else into a bowl EXCEPT butter and fruit. Mix and pour over the butter into the dish. Dump the fruit on top, DO NOT stir (it will magically fall to the bottom as it cooks). Bake for 30-45 minutes.

easy lemon poppy seed cake
this was the desert or whatever for my v-day meal, this as well is still waiting for someone to eat it, i had some and it was good.
i'm not very good at baking but the recipe said "easy" so i gave it a try, mine was a little dry but again i've never been good at baking, i have no patience for it and well i suck at it =)
watcha need:
1 package (about 16oz.) of pound cake mix
1/2 cup sour cream (this sounds very wierd to me lol)
1/2 cup water
2 eggs
4 tsp. pure lemon extract
2 tbsp. popppy seeds (i could only find some cheap roundy's brand and some mcCormick (i used mcCormick cuz roundy's is cheap, not good cheap either!
what to do:
Beat the ingrediants, except the poppy seed! in large bowl with electric mixer on low speed until moistened, scrape sides of bowl frequently and then continue to beat on medium for about 3 min or until well blended
stir in poppy seed, pour inbto greased and flowered 10-cup bundt pan
bake in 350F oven 40-45 min, cool in pan bout 10 min
cool completely and sprinkle with confectioners sugar if you like

so i made these for valentines day...and jared got home too late from work, so nobody got to enjoy them.. =( yup i spent V-day all by myself and cooked and my food didn't get eaten *tear tear*
but one of you can enjoy all my wasted effort......
you'll need:
2 tbsp. dijon mustard
1 tbsp. olive oil
1 tbsp. chopped (fresh) rosemary
1/8 tsp. black pepper or more if you like pepper
8 lamb chops...i get the smaller more expensive ones cuz they looked pretty and taste better (less fatty and no bones!)
1. preheat broiler. add 1/2 inch water in broiler pan to prevent kitchen from filling up with smoke lol (set aside pan)
2. combine mustard, oil, rosemary and pepper in small bowl, brush mixture on both sides of the pork chops, place pork chops on unheated broiler pan
3. broil about 4 inches from heat (7-10 min for medium) turning once! serve immediatly, you can top with leftover fresh rosemary to look pretty.....
this serves 4 or if your man eats alot like mine...2
