White chocolate PB sandwhich treats

Ingredients:
Ritz Crackers
Peanut Butter
Melted white chocolate (I like to use vanilla flavored CandiQuik)

Make a PB sandwhich out of the crackers and peanut butter. Dip in the melted chocolate, set on wax paper to dry.

Yummy!!
(There are also a few apple peices on the side that we dipped in the white chocolate)

Fun Apple Snack

Ok, we'll there's no real name to this, but it's a favorite at our house.
Ingredients:
Apple
Peanut butter
Chocolate chips

Slice the apple into slices. Spread with peanut butter. Let your kids decorate the peanut butter with chocolate chips. Enjoy!

Tootsie Rolls

These homemade tootsie rolls are delicious!

3 Tbs. butter
2 squares unsweetened baking chocolate

melt together and then add:
1/2 c. corn syrup
1 tsp vanilla
3/4 c. powdered milk

mix until dissolved then add:
3 c. powdered sugar

knead until well mixed. (For a sourburst substitute 1 package of kool-aid for the chocolate)

Spicy Bolivian Chicken

I found this recipe online and tried it at my sisters house. Even her children liked it so we had it again when my parents came out to visit. This version comes from cdkitchen.com, but I'v modified it slightly.
1 1/2 lbs. skinless, boneless chicken breasts, cut in. 1/2 in strips
2 tbsp oil
1 lg. onion, chopped
2 red bell peppers, cut in 1/4 in. strips
2 cloves garlic, finely chopped
1 tsp crushed hot red pepper (or more for spicier)
3 C. chicken broth
3/4 C. peanut butter
10 oz. package peas, thawed
salt and pepper to taste

Season chicken with salt and pepper. Heat oil in lg. frying pan to medium, add chicken strips and saute, while stirring until chicken is white and starting to brown. Add onion, peppers, and garlic and cook until tender, then stir in hot pepper. Add broth and peanut butter, and simmer, stirring occasionally for 10 min. Stir in peas and cook 5-10 min. stirring occasionally until sauce is thick and mixture is heated through. Serve over rice or boiled potatoes.

Tuna Pasta Salad

My sister wanted me to post this.It is a yummy summer salad. I think it's best to make ahead of time and let it sit in the fridge awhile.

8 oz. uncooked bow tie pasta (farfalle)
2 (6 oz.) cans tuna, drained---I only use one can---
1 cup frozen peas
1/2 cup sliced celery
1/3 cup shredded Parmesan cheese
1/4 teaspoon dried dill weed
1/2 cup mayonnaise
3/4 cup Italian salad dressing

Cook pasta to desired tenderness as directed on package, adding peas during the last 3 minutes of cooking time. Drain and rinse with cold water.In a large bowl, combine cooked pasta and all remaining ingredients; stir gently to coat. Refrigerate until serving time.

Chicken Alfredo Pizza

I got this from my friend Camille. It is so amazingly good I had to share. Hope you like it as much as me.

Pizza Crust:
1 T. yeast
2 T sugar
1 cup warm water
2 ½ cups flour
1 t salt
2 T oil
¼ cup powdered milk
Mix yeast and sugar in warm water. Let it grow. Then add the rest of the ingredients and mix.

This his her alfredo sauce it's a little different than mine. I make the pizza with my sauce but this one is good too, if you want to try it.

1 stick unsalted butter
1 cup heavy whipping cream
1/2 tsp salt
1/8 tsp pepper
1/4 tsp nutmeg
1/2 cup parmesan cheese
Heat butter and whipping cream over low stirring until butter is melted. Stir in cheese, salt, pepper and nurmeg.

Spread crust on cookie sheet pan. Add sauce, cooked cubes of chicken, sliced onion, and minced garlic to pizza. Top with 8 oz. shredded mozzarella cheese. Bake at 475 degrees for 10-15 minutes.

Strawberry Cream Puffs


Strawberries are my favorite! So I love to make anything that calls for strawberries. These were really good and simple to make.

1 cup water
1/2 cup butter, cubed
1 tsp sugar
1/4 tsp salt
1 cup flour
4 eggs
FILLING:
2 pints strawberries, sliced
1/2 cup sugar, divided
2 cups heavy whipping cream**

Optinal:
Confectioners' sugar
Additional sliced strawberries
mint leaves

In a saucepan, bring water, butter, sugar and salt to boil. Add flour all at once, stir until forms a ball. Remove from heat; let stand 5 minutes. Beat in eggs, one at a time. Continue beating until mixture is smooth and shinny.

Drop by tablespoonfuls 2 in apart on baking sheet (make 10). Bake 400 degrees for 35 minutes until golden brown. Cool

For filling, combine berries and 1/4 cup sugar. Chill 3 minutes

Beat cream and remaining sugar until stiff. Just before serving, cut tops off puffs. Combine berries and cream mixture. Fill cream puffs and replace tops. Sprinkle with confectioners' sugar and top with additional berries and mint leaves if you want.

**I only do half the cream it says. I think 2 cups makes too much.
