Slow Cooker Chicken Taco Soup

We're making this for dinner tonight since it's soooo cold down here!! This came from allrecipes.com. I changed it a bit, it called for beer which I substituted with chicken broth. It also originally called for 2 cans of the tomatoes and green chilis, but I thought that would make it too spicy for us, so I just put one in. We're looking forward to it tonight!

Ingredients
• 1 onion, chopped
• 1 (16 ounce) can chili beans
• 1 (15 ounce) can black beans
• 1 (15 ounce) can whole kernel corn, drained
• 1 can of chicken broth
• 1 can diced tomatoes with green chilies, undrained (ro-tel original)
• 1 (1.25 ounce) package taco seasoning
• 3 whole skinless, boneless chicken breasts
• shredded Cheddar cheese (optional)
• sour cream (optional)
• crushed tortilla chips (optional)
Directions
1. Place the onion, chili beans, black beans, corn,  chicken broth, and diced tomatoes in a slow cooker. Add taco seasoning, and stir to blend. Lay chicken breasts on top of the mixture, pressing down slightly until just covered by the other ingredients. Set slow cooker for low heat, cover, and cook for 5 hours. (If your in a hurry, just boil the chicken breasts on the stove top, shred them and then add them to the rest of the soup)
2. Remove chicken breasts from the soup, and allow to cool long enough to be handled. Stir the shredded chicken back into the soup, and continue cooking for 2 hours. Serve topped with shredded Cheddar cheese, a dollop of sour cream, and crushed tortilla chips, if desired.

Best Ever Green Bean Casserole

I found this recipe off the Food Network. It's Alton Brown recipe for The Best Ever Green Bean Casserole. We loved it! Much better than the canned stuff and pretty easy to do. However, I did try to make my own onions like the recipe shows but I only cooked them for half the time and they were all burnt and nasty. I then looked up the reviews on this recipe and everyone had problems with the onions. So we did like many of them, just make the bean and sauce and added the French's onions. It was very yummy. Will be making this instead of the canned stuff from now on.

For beans and sauce:

  • 2 tablespoons plus 1 teaspoon kosher salt, divided
  • 1 pound fresh green beans, rinsed, trimmed and halved
  • 2 tablespoons unsalted butter
  • 12 ounces mushrooms, trimmed and cut into 1/2-inch pieces
  • 1/2 teaspoon freshly ground black pepper
  • 2 cloves garlic, minced
  • 1/4 teaspoon freshly ground nutmeg
  • 2 tablespoons all-purpose flour
  • 1 cup chicken broth
  • 1 cup half-and-half

Directions

For beans. Bring a gallon of water and 2 tablespoons of salt to a boil in an 8-quart saucepan. Add the beans and blanch for 5 minutes. Drain in a colander and immediately plunge the beans into a large bowl of ice water to stop the cooking. Drain and set aside.

Melt the butter in a 12-inch cast iron skillet set over medium-high heat. Add the mushrooms, 1 teaspoon salt and pepper and cook, stirring occasionally, until the mushrooms begin to give up some of their liquid, approximately 4 to 5 minutes. Add the garlic and nutmeg and continue to cook for another 1 to 2 minutes. Sprinkle the flour over the mixture and stir to combine. Cook for 1 minute. Add the broth and simmer for 1 minute. Decrease the heat to medium-low and add the half-and-half. Cook until the mixture thickens, stirring occasionally, approximately 6 to 8 minutes.

Remove from the heat and stir in 1/4 of the onions and all of the green beans. Top with the remaining onions. Place into the oven and bake until bubbly, approximately 15 minutes. Remove and serve immediately.

Pear Turkeys and "Plymouth Rocks"

These are the desserts we made for tonight's Thanksgiving FHE. The turkeys can be made with apples or pears. We just had alot of pears that needed to be used so that's what our Turkeys are made of. You can also color the mini marshmallows with food coloring if you want multi-colored "feathers". It was late and the kids had fun with just the normal marshmallows so thats what we used.

As you can see, for the turkeys you just poke mini marshmallows on toothpicks and then stick them in the fruit. ( We only had some bamboo skewers, but I think toothpicks would be best) We then pushed chocolate chips into the fruit to make the eyes.

For the plymouth rocks I just melted some chocolate, added nuts and marshmallows then stirred. Then I scooped out spoonfuls of the mixture onto parchment paper to harden. I put them in the freezer to harden them faster. They were yummy!!

Turkey Salad Croissants

My sister called me and requested this recipe. I had forgotten I had it, I haven't made it so long. I was in shock to find out that she actually liked something I made ;-)

2 cups diced cooked turkey
1/2 cups chopped celery
1/2 cup chopped cashews
1/2 cup mayonnaise
1/4 cup coarsely chopped radishes
2 Tbs. chopped green onions
2 Tbs. diced pimientos
1 Tbs. lemon juice
1 tsp. dill weed
1 tsp. salt
lettuce leaves
6 croissants

In a bowl, combine the first 10 ingredients. Place lettuce and 2/3 cup turkey salad mixture on each croissant.

* I always leave out the radishes and pimientos but so you know they are in the recipe in case you like that stuff

Easy yummy doughnuts


A quick and fun FHE dessert!! I know, I know, I'm always posting desserts, but they're the most fun to make-and eat!!

Ingredients:
1 can of refrigerator biscuits-(I always get the super cheap pilsbury buttermilk biscuits that come 10 to a can, and some times you can find them in a pack of 4 cans.)
1 quart of oil for frying

Frosting or powdered sugar

1. Heat the oil in a deep fat fryer to 300, or heat oil in pan on the stove over med high heat.
2. Take biscuits from can and separate. Then using an apple corer, or other small round shape, cut the holes out of the middle of them.
3. Place the biscuits in oil and cook until golden brown. Turn them over to brown both sides evenly. (about 2-3 minutes per side)
4. Frost hot doughnuts with frosting, or cover them with powdered sugar.

YUMMY!!
